Site staff sets out trays based on number of meals requested. At end of meal service, they are supposed to count out remaining trays to determine the number of meals served. We (in the main office) then check the meals served in POS to verify numbers are correct, and address discrepancies when they occur. By having "Meals Served" prominently displayed, we think site staff will just use that number instead of counting their trays, which will offset a check-and-balance we have as part of our departmental procedure.
