online menu - control which nutrients shown in summary

I'd like to be able to control which nutrients are shown on the picture of the menu item. For example, showing the number of carbs would be highly useful to the nursing staff and students who have to manage carbs. If it's not possible to make if fully customizable, hard-coding the ability to make the carbs show up, would be sufficient.
