In the production records it would be easier if you move the (auto count) from the left over column to the student serve column so we can type in the left over number ourselves. Then it would generate the left over number

There is an option in the Production Configuration for this!
Go to Setup>Production>Configuration and uncheck the box to Update Leftovers Based on Servings. With this unchecked, you can now enter the Leftover amount and it will auto populate the Student Servings based on Produced amount - Leftovers.
